White Chocolate Lady Grey Muffins

INGREDIENTS

4 Lady Grey Tea Bags

1 cup whole milk

2 cups all purpose flour

1/4 cup of sugar

1/4 cup of honey

1/2 teaspoon salt

1 tablespoon baking powder

1/4 teaspoon nutmeg

2 teaspoons lemon zest
-
1 egg
-
4 tablespoons of butter/sunflower oil
-
handful of oats
-
handful of white chocolates
METHOD
1. Preheat your oven to 190°C. Grease muffin tin/cups with butter/oil. *Note: make sure to adjust the oven rack is positioned in the middle of the oven.
2. Heat the milk in a saucepan over medium low heat. Make sure the milk is hot but not bubbling over. Add in the tea bags, cover, and let it sit for 10-20 minutes.
3. Using a large mixing bowl, whisk together flour, sugar, salt, baking pwder, nutmeg, and lemon zest.
4. Add butter, milk, and egg to dry ingredients, combining everything with a whisk.
5. Lastly carefully mix in the oats and white chocolate (chopped into small chunks). You might want to use a baking spatula for this step.
6. Fill each muffin cup with batter up to the 3/4 point and bake for 20 minutes or until golden (slightly cracked). Insert a toothpick into the middle of the muffin, if it comes out clean it's done!
